So much trouble with money and it's still going on

I met with Sherrie in her home, felt very welcomed and my son was settled so paid Sherrie and signed all the necessary paperwork to get him started with them in October 2023 when I returned to work. He was only going one day a week initially which was all agreed. I paid a 4 weeks deposit via bank transfer which I was told I would get back if he didn't settle or it would pay for 4 weeks notice when he left. He had settling session set for Wednesday and Friday before he started but Sherrie cancelled as she said she was over ratio, then we thought we would be there on Friday for a settle and Sherrie cancelled as she had been sick that morning. Sherrie text me the night before asking for the October fees through bank transfer as the accountant had put the invoice through as monthly rather than weekly which we had initially agreed. Sherrie told me that I needed to pay it that morning so he can be included in her planning. I told Sherrie that i had intended to pay through tax free childcare but she said it had to be done through bank transfer so she received it sooner. She then messaged me about a trip to see santa and wanted me to pay more money for this, i said i wanted to see santa with him as a family and wouldnt be paying for this. He attended 2nd October as settling in session which was the whole day as he had missed out on that other settling in days. The plan was for me to stay with him for an hour or so before leaving, but Sherrie said I didn't need to and he will be ok etc. So now I've paid £240 for deposit and £180 for October fees via bank transfer she was closed a day in October so she told me that I didn't have to pay for the day which is why it was less, after billys first day she text asking for the £60 and telling me I would get it back on the day of the closure. She then wanted £25 for a transport fee when they go out in the taxi, I transferred this but then she told me it was wrong and I was supposed to be £45. Novemeber fees weren't due till 1st Novemeber Sherrie was demanding these to be sent on the 19th October to reach her before the 1st, on the 10th october Sherrie told me i now need to send Novemeber fees by the 13th october. I had a conversation with Sherrie about increasing his days in January, she was happy with that and said another deposit will be needed. Sherrie wanted this deposit and the first 4 week fees with the Novemeber fees. I explained to Sherrie I have paid her alot of money in a very short space of time and I haven't actually been paid again since I've paid her 2 months fees and a deposit. I told Sherri if she needed it that badly then I will just keep it as it is at 1 day a week. On the 12th October I had reminder text message about needing to send payment and she wanted a screen shot of it being sent. I was panicking sending her updates as I was waiting for money to clear in my tax free account, she was texting asking if it was ready and sent. Sherrie was closed 19th October so my son had only been twice 1 settling in and 1 full day before she closed for holiday which was fine. I arrived the 23rd October to drop my son off and she wasn't home. I message her and she eventually got back to me to tell me she was still on holiday and not open till tomorrow. She told me she had to fly back out there as she had her sons passport. She never told me she was closed today. I told Sherrie I think we need to talk as I need to find another childminder as there is no consistency and I need that for my job. She was fine with that and told me she would give me a full refund of £765 it's now 26th June 2024 and I am still waiting for £525. Sherrie demanded screen shots and emails when I was sending money but she ignores messages and doesn't message me back when she's the one owing money. Seriously avoid!!
